Ghanaian Cooking Class featuring Peanut Soup and Fufu

This is Elizabeth. She is from Ghana and she is our Steward. She cooks and cleans for us and does a fabulous job! I am currently working as Assistant CLO for the Consulate and as such, we organize and implement cooking classes twice a month. This month Elizabeth taught a class and we learned how to make some Ghanaian Food--Ground Nut Soup and Plantain/Cassava Fufu. It was DELICIOUS! She began with peanuts ground up into a paste, then added fresh tomatoes (seeded), onions, garlic, ginger. She then cooked up some chicken, added 2 small chill peppers and (of all things) a few cut up okra. She then made her native fufu (which is a bit different as it has plantains in it) and formed it into round fist-sized balls. When it came time to eat, we wanted it to be authentic so we ripped off some fufu, dipped it in the soup and ate it. No silverware needed, which made for a quicker, easier clean up. =) It was very tasty and the fufu was very filling!
